    1/3cup fresh lemon juice
    1/4cup low sodium soy sauce
    1medium garlic cloves , minced
    1/2tsp salt
    1/2tsp ground ginger
    1/4tsp black pepper
    2lb boneless skinless chicken breasts
    1cooking spray


1 In a shallow container, stir together lemon juice, soy sauce, minced garlic, salt, ginger, and black pepper. Add the chicken, cover, and allow to marinate in the refrigerator for 2 to 3 hours, turning once.
2 Drain and discard the marinade; transfer the chicken to the rack of a shallow roasting pan coated with cooking spray.
3 Bake the chicken for roughly 1 hour at 325 degrees F, or until done. Cut into 2-ounce slices before serving.
