Ingredients

    4 Oz. Cooked Chicken Breast
    1 Cup Cooked Brown Rice
    2 Tbsp Salsa
    2 Tbsp Fat Free Sour Cream
    1 Tbsp Mexican Style shredded cheese made with 2% Milk

Directions

Slice or dice 4 oz of cooked skinless chicken breast. Place on top of 1 cup cooked brown rice. Add salsa, sour cream and mexican cheese. Enjoy

You can also buy the pre-cooked/pre-sliced chicken breast in the deli section. You can also replace the fat free sour cream with plain greek style yogurt. Also adding fresh cilantro or avocado would add some additional zing.
