Ingredients

    1/2 medium potato, shredded
    1 oz Cabot 75% fat-free cheddar shredded
    1 large egg
    salt and pepper tp taste

Directions

Preheat oven to 400 degrees. Spray oven proof bowel or ramekin. Reserve 1 tablespoon cheese. Mix cheese, potato and seasoning and packe into bowl/ramekin going up the sides leaving indentation in middle. Bake 25 to 30 minutes until brown and crisp. Either break egg into center or scramble and put into center plus salt and pepper, top with reserved cheese. Bake for another 8 to 12 minutes or until egg is set.
