Introduction

Moist and yummy. Low in saturated fat. High in fiber. Also a good source of calcium, iron and protein. These muffins may be small, but they pack a nutritional punch! Moist and yummy. Ingredients

    2 c. whole wheat flour
    1 c. wheat bran
    2 tsp. baking soda
    1 tsp. baking powder
    1 tsp. salt
    1 1/2 c. milk (1%)
    1/2 c. pineapple juice
    1/2 c. molasses
    1/2 c. corn oil
    2 eggs
    3/4 c. crushed pineapple

Directions

Combine all dry ingredients. Combine all liquid ingredients. Blend these mixtures together. Spoon into greased or nonstick muffins tins and bake @ 375 for 15 minutes. Yields approx. 18 muffins. Fruit additions may be substituted based on tastes.
