Ingredients

    1 cup cooked spaghetti pasta
    4 Marinated Artichoke hearts in oil
    .5 cup spinach leaves torn into pieces
    1 tsp red pepper flake
    1 tbsp parmesan cheese

Directions

While pasta is cooking (3/4 cup dry makes about 1 cup cooked) chop artichoke hearts with oil in the bottom of the bowl in which you wish to eat this dish in. Add red pepper flake, top with torn spinach. Add hot pasta, let sit for 2 minutes, mix - add cheese if desired.

I like to then zap it in the microwave for 30 seconds just to melt the cheese.

Serve with a grilled chicken breast for a more filling meal.
