Introduction

Super yummy for breakfast, lunch or dinner... hot or cold! Super yummy for breakfast, lunch or dinner... hot or cold!

Ingredients

    8 eggs, whisked together
    1 onion, sliced
    1 bell pepper, chopped
    1/2 yellow squash, chopped
    2 green chilis, canned, chopped
    extra virgin olive oil
    1/4 c cheddar cheese, shredded
    1 small tomato, chopped and seeded

Directions

Preheat oven to 350
- Wash and chop all vegetables.
- Sautee all vegetables until soft
- Spoon a small amount of vegetables into the muffin cups
- Whisk eggs together, season with salt and pepper
- Pour egg mixture over vegetables
- Mix each cup gently
- Sprinkle a small amount of cheese over each muffin
- Bake about 12 minutes, or until toothpicks come out clean

    I changed the vegetables for what I had on hand. I also ended up with 10 mini fritattas rather than 12. - 4/28/16
