    1/3 c Knudsen Low Fat Cottage Cheese 2% milk-fat small curd
    3 Tbsp Butter Room Temp
    1 Large Egg Room Temp
    1/2 c all purpose flour, divided
    1/8 c Grated Parmesan Cheese
    pinch of ground nutmeg
    .5 tsp fine sea salt
    1/3 c Chopped Flat-leaf Italian Parsley


Puree cottage cheese until smooth.

In mixer, beat butter and egg together.

Add cottage cheese, 1/4 c flour, sea salt and nutmeg. Blend until just mixed.

Add the rest of the flour, Parmesan cheese and parsley and mix.

bring a large pot of salted water to a boil. drop in bits of the dough about the size of a cherry. When dumplings rise to the top, simmer until cooked through, about 2.5-3 minutes.

Melt butter in skillet over med heat. Add dumplings to skillet and cook till brown.

add to soup.
