    1 packet unflavored gelatin (2tsp)
    3 Tbsp cold water
    2 tsp freshly grated lemon zest (make sure the lemons are well scrubbed)
    3 large egg whites
    Juice of one lemon
    2 cups plain, nonfat yogurt
    1/4 cup agave nectar or powdered fruit sugar, divided


Put cold water into a measuring cup. Sprinkle the gelatin over the water & let it sit for a few minutes to soften.

Pour the gelatin mixture into a small saucepan & heat over low flame. Stir constantly while the mixture heats up, until the gelatin dissolves-about 5 minutes. (I leave the gelatine in the glass measuring cup and heat it in the microwave for a minute)

Add lemon juice and half the agave nectar or sugar. Stir well. If you're using powdered fruit sugar, make sure all crystals have disolved. (I like using Truvia)

Pour egg whites into separate bowl. Beat until light and fluffy, with soft peaks. Add the rest of the sugar or agave nectar. Beat well until eggs become stiff. Set aside.

Put yogurt in a medium-sized mixing bowl. Add gelatin/lemon mixture and mix well. Add beaten egg whites and fold in gently until they have been incorporated into the yogurt mixture.

Chill for at least 30 minutes.
