    1 bag frozen fries
    parmesan cheese (2 handfuls)
    1 t salt
    hot pepper flakes
    1 T grill seasoning

    1 1/4 pounds ground chicken
    3 garlic gloves
    4 anchovy fillets, finely chopped
    handful of parmesan cheese
    1 T worchestershire sauce
    flatleaf parsley
    1 T lemon zest and juice of 1/2 lemon
    1 t dijon mustard


Preheat oven to 425 degrees. Combine parmesan, salt, rosemary, hot pepper flakes and grill seasoning in a bowl. Pour fries onto a baking sheet. Bake until almost crisp. Half way through remove and sprinkle with parmesan cheese tossing them to coat, then finish baking. Sprinkle them with cheese-herb mixture.

In a bowl combine chicken, finely chopped garlic, anchovies, handful of cheese, pinch of salt and peppers, worchestershire sauce, parsley and lemon juice. Mix meat and form 4 patties. Heat a large skillet with 1 T of EVOO cook patties 3-4 minutes per side. Toast rolls under broiler, rub with cracked garlic and drizzle with EVOO. Combine dijon mustard, lemon juice, 2-3 T of EVOO, salt and pepper. Toss romaine hearts with it. Place patties on the buns, top with romaine. Serve with taters.
