    1 egg, beaten
    1 cup flour
    1/2 cup skim milk
    1/2 cup half and half
    1 tsp lemon juice (to sour milk)
    1 tsp baking powder
    1/2 tsp baking soda
    1 tsp sugar
    2 Tblsp cooking oil (used coconut oil melted, in this version)


In large mixing bowl, beat egg until mixed. Add lemon juice or vinegar to milk to sour, unless using buttermilk. Add milk and oil or shortening to egg and beat well. Combine dry ingredients and blend just until mixed. Heat griddle and cook.
