A quick and easy versatile topping for just about anything! A quick and easy versatile topping for just about anything!
Number of Servings: 8


    1 c. grape tomatoes, quartered
    2 TBSP diced red onion
    1/4 c. chopped cilantro
    2 TBSP finely chopped basil
    2 TBSP minced garlic
    1 TBSP balsamic vinegar
    1 TBSP olive oil
    1/3 c. chopped calamata olives
    3 TBSP shredded Parmesan cheese
    pinch of salt
    fresh cracked black pepper to taste


Mix all ingredients together. Cover and refrigerate for at least one hour. Serve on toasted baguette, on top of grilled chicken or fish, as an alternative to salad dressing, or even tossed with pasta. Will keep in refrigerator for at least 5 days.
