    1 19 oz can kidney beans
    1 med onion, chopped
    2 slices bacon cut into 1/2" pieces
    3 tbsp maple syrup
    2 tsp dry mustard
    1/2 Tbsp sambal oleek (chili paste)
    Fresh pineapple, 1 slice cut into chunks
    1 tsp Garlic, chopped
    1 tsp grated ginger root or ginger paste
    1/4 cup water


Cook bacon with onion in small non stick skillet until onion is soft and bacon is partially cooked. Transfer to slow cooker or casserole.
Addf the next 7 ingredients to the skillet and heat over medium until bubbly. Remove from heat.
Drain and rinse kidney beans. Add to bacon and onions, stir.
Pour sauce in skillet over bean mixture and stir. Cook on high setting of slow cooker or in 300 degree oven for 2 hours. Check periodically and add water if beans appear dry.
