Ingredients

    1/3 cup dried brown lentils
    1/2 onion, chopped
    2 small-medium size carrots, chopped
    About 1/3 jar of roasted red peppers (roughly 3/4 cup)
    1-2 tbsp minced garlic
    1 chicken bouillon cube
    2-4 tbsp red wine
    Spices to taste:
    Rosemary
    Basil
    Fennel
    Cayenne Pepper

Directions

Put the lentils, onion, carrots, peppers, garlic, and bouillon in a pot and cover with water. Add spices and a bay leaf, if desired.
Bring to a boil and reduce to a simmer until everything is soft. Puree with an immersion blender or in batches in a food processor or blender. Enjoy!
