    3/4 cup brown rice (already cooked)
    1 egg
    1/4 cup kidney beans
    1/2 cup canned green peas


Mix rice, beans, and peas in a hot, non-stick skillet. In a separate bowl, beat egg and pour egg over rice. Stir mixture until egg is set. This is great for breakfast and can easily be made for more than 1 serving.

Optional: shredded cheese, garlic, or hot sauce
