    Couscous, 100 grams
    Green Peppers, 24 grams
    Yellow Peppers (bell peppers), 14 grams
    *Red capsicum, 15 gram(s)
    Onions, raw, 25 grams
    Cherry Tomatoes, Fresh, 1 Tomato, 6 serving
    *Lemon Juice, 30 mL
    Olive Oil, .5 tbsp
    Salt, .5 tsp
    Pepper, black, 1 tbsp
    Boiling Water, 200 mL
    Parsley, 4 grams
    Pine Nuts 6 grams


Mix lemon juice, salt, pepper and olive oil in a cup. Put couscous in a bowl pour the mixture over the couscous along with enough boiling water to just barely cover. set aside and leave to stand for 5 minutes.
Finely chop the peppers onions and parsley.
Pick over the couscous with a fork to loosen it into grains, stir in the prepared veg and herbs, & pine nuts add additional seasoning and or lemon juice to suit your taste
