Ingredients

    6 boneless, skinless chicken breasts, cubed
    1 cup long grain brown rice
    6 oz. mozzarella part skim cheese
    salt & pepper
    1 tablespoon Italian seasoning
    1 tablespoon minced garlic

Directions

Cook rice according to directions. Stir together rice, tomatoes, water, & garlic. Sprinkle salt & pepper onto the chicken. Place chicken into 9x13 baking dish, sprayed with nonstick cooking spray. Shred cheese, then sprinkle the cheese and the Italian seasoning on top of the chicken. Spred the rice and tomatoe mixture on the top. Bake uncovered at 400 degrees about 30 minutes.
