Ingredients

    1 Tbsp Canola Oil
    1 Med. Onion finely chopped
    2 cloves garlic, pressed
    1 Tbsp Tabasico
    1 Tsp ground cumin
    28 oz. tomatoes in juice, drained and chopped
    1 2/3 cup canned black bean, drained and rinsed
    4 large eggs
    1avocado, sliced
    4 flour tortillas (6 inch), warmed

Directions

In 4 qt. sauce pan, heat oil on meduim until hot. Add garlic and onions, cook 8 minutes or until beginning to brown. Stir in tabasico and cumin; cook 30 seconds, stirring. Add Chopped tomatoes and cover and cook 3 minutes to blend flavors, stir occasionally. Stir in beans and heat through, about 3 minutes, stirring occasionally.

Meanwhile, in nonstick skillet on medium heat, cook egg on at a time. Cover egg and cook 4 minutes to set the yoke.

Place one tortilla on each plate, top with tomato mix and one egg. Serve with avocado slices.
