Very filling omelet with only 1 egg per serving. Very filling omelet with only 1 egg per serving.

    1/2 onion, chopped
    1/2 bell pepper, chopped
    1 clove garlic, minced
    2 c. raw spinach
    3 eggs
    approx. 2 Tbsp. water
    1 tsp. spreadable butter w/canola oil
    2 Tbsp. cheese, grated


Makes 3 servings.
Spray skillet. Saute vegetables until tender. Remove vegetables from the skillet.

Whisk eggs together with water. Melt butter in skillet. Pour eggs into skillet. Cook until done.

Pour vegetables over the cooked eggs. Sprinkle with cheese. Fold eggs over the vegetables. Cook until cheese is melted.
