Introduction

Ingredients

Olive Oil, 1 tbsp
Onion, chopped, 1
Chili powder, 2 tbsp
Cumin, ground, 1 tbsp
Cinnamon, ground, 1 tsp
Green Chilies, chopped, 4oz can
Black Beans, 15.5 oz can
Beans, red kidney, 15.5 oz can
Beans, pinto, , 15.5 oz can
Diced Tomatoes - no salt added , 15.5 oz can
Tomato Sauce, 15.5 oz can
Monterey Jack Cheese shredded - reduced fat, 1 cup
Tortilla chips (optional)
4 - 16oz bowls or ramekins
Directions
Heat the oil in a Dutch oven over medium heat. Add the onion and cook, stirring for 5 minutes or until tender. Stir in the chili powder, cumin and cinnamon and cook, stirring for 1 minute. Stir in chiles, beans, tomatoes, and tomato sauce and bring to a simmer. Cook for 15 minutes, or until flavors blend. Seaon with salt and pepper to taste.
Preheat the broiler.
Divide the chili among 4 16oz ramekins or bowls. Place on baking sheet and sprinkle each with 1/4 cup of cheese. Broil for 2 minutes or until cheese melts. Serve with tortilla chips, if using.
