    * 96% Lean Ground Beef, 16 oz (remove)
    * Parmesan Cheese, grated, .25 cup (remove)
    * Egg, fresh, 1 large (remove)
    * Garlic, 3 cloves (remove)
    * Salt Free Mrs Dash, 0.25 tsp (remove)
    * Pepper, black, 1 tsp (remove)
    * Red Gold diced tomatoes, 3 cup (remove)
    * Red Potato, 1 pound
    * Bread crumbs, dry, grated, plain, .25 cup (remove)
    * Water, tap, 2 TBSP


1. Combine ground beef, bread crumbs, 1/4 cup cheese, egg whites, water, 1 clove garlic, salt and pepper in large bowl, mixing lightly but thoroughly. Shape into meatballs. Heat large nonstick skillet over medium heat until hot.

2. Cook meatballs in oven on cookie sheet sprayed with oil on 400 for 10 min;

3. Add remaining 2 cloves garlic, tomatoes and potatoes; meat balls to the skillet, bring to a boil. Reduce heat; cover and simmer 20 to 25 minutes and until potatoes are tender. Uncover; continue simmering about 5 minutes or until sauce is slightly thickened, stirring occasionally. Season with salt and pepper, as desired.

Makes 4 servings - 303g each for the potato sauce mix

i.e. if you make 12 large meatballs then 3 per serving or if you make 24 smaller meatballs then 6 per serving.
