Ingredients

280 grams potatoes, diced
175 grams Trader Joe's Soy Chorizo
115 grams zucchini, diced
1 can black beans, no salt added variety (including liquid)
1 handful cilantro
1 cup Trader Joe's Low Sodium Vegetable Broth
1 tbsp extra virgin olive oil
2 tbsp dried basil
2 tbsp minced garlic
1 tbsp chili powder
2 tsp ground cumin
Directions
In a pot, brown the garlic in the olive oil. Add potatoes and cook until most of them are slightly browned.
Squeeze the filling of the chorizo into the pan and break apart. Cook until chorizo is sizzling.
Add all remaining ingredients. Raise heat to high and stir constantly. When boiling, lower heat to low and cover the pot.
Simmer for 15-20 minutes or until potatoes are tender.
