    1/2 cup unsalted, shelled pistachios
    3 tablespoons sesame seeds
    2 teaspoons ground corriander
    1 1/2 tsp ground cumin
    1 egg
    1 tbs water
    1/4 cup flour
    salt and pepper to taste
    4 boneless skinless chicken breasts


preheat oven to 400f and coat a foil-lined baking sheet with cooking spray. Finely chop pistachios in a food processor or by hand. Transfer to a shallow bowl and stir together with sesame seed, coriander, and cumin. In another shallow bowl, beat egg and water together. Add flour to 3rd bowl and season with salt and pepper.
Dip a piece of chicken in the flour and shake off excess, quickly dip in egg mixture then pistachio mixture, turning to coat both sides. Transfer to baking sheet and repeat with remaining chicken. Bake for 25-30 mins or until juices run clear with a knife in the thickest part.
