You'll need 4 ramekins.

Ingredients

* *Butter Flavored Cooking Spray, 1 serving (remove)
* Applesauce, unsweetened, .25 cup (remove)
* Vanilla Extract, 1 tsp (remove)
1/4 teaspoon very finely ground espresso beans (optional)
* Egg white, 4 serving (remove)
* Brown Sugar, 1 cup, unpacked (remove)
* Cocoa, dry powder, unsweetened, .75 cup (remove)
* Salt, .5 tsp (remove)
4 raspberries and powdered sugar suggested but are optional.
Directions
Preheat oven to 350 degrees.
Generously mist all 4 ramekins with cooking spray and then place them in an 8x8 baking pan. Add water to the dish until it reaches halfway up the ramekins.
Use a whisk or spatula to mix the applesauce, vanilla, egg whites, and brown sugar in a large bowl until well combined. Add cocoa powder, espresso, and salt. Stir until just combined and there are no more lumps. Divide evenly among the ramekins. (about 2/3rds full)
Bake for 21 to 24 minutes, until the tops look silky and puff slightly and a toothpick inserted comes out a bit wet. Remove from oven and carefully transfer the ramekins from the water bath to a cooling rack. Cool 5-10 minutes. Then invert each ramekin onto a dessert plate. Let stand one minute and then slowly lift the ramekin leaving the cake whole. If the cake doesn't come out clean, gently run a knife around the edges to loosen. Cool another 5/10 minutes.
You can then place a raspberry on top, sprinkle with powdered sugar, or eat alone.
Serve immediately.
