Ingredients

    2 Tbsp dried onion flakes
    1/4 pound lean ground beef
    1/4 pound lean ground turkey
    3 Tbsp bread crumbs
    1/4 tsp paprika
    1/4 tsp seasoned salt
    1/8 tsp black pepper
    1 Tbsp reduced fat parmesan cheese
    1 egg, beaten
    2 Tbsp milk

    1 tsp crushed fennel
    2 cloves garlic, minced
    6 cups chicken broth
    4 ounces angel hair pasta
    2 yellow squash (1/2 lb)
    5 ounces/4 cups spinach
    1 Tbsp red wine vinegar
    1 Tbsp pickapeppa sauce
    1 med red pepper

Directions

Mix first set of ingredients and form tiny meatballs.

Bring chicken broth to a boil. Gently drop in meatlballs and spices. Cook 5 minutes, then add pasta, squash, and pepper. Cook 7 minutes more. Add spinach and red wine vinegar.

Makes 10 cups - 5-2 cup servings
