Introduction

Small muffins but with a lot of flavor. Small muffins but with a lot of flavor.
Number of Servings: 20

Ingredients

    1-1/4 c. bran
    2/3 c. [nonfat] milk
    2 eggs
    1/2 c. sugar
    1/4 c. vegetable oil or melted
    butter
    1 c. flour
    2-1/2 tsp. baking powder
    1/2 tsp. salt
    3/4 tsp. ground cinnamon
    1/4 tsp. ground cloves
    1 c. finely chopped apple
    1 c. raisins

Directions

Soak brain in hot water at least 10 minutes to soften it. DRAIN IT WELL. Preheat oven to 400'. Combine drained bran, milk, eggs, sugar, and oil (or butter) in bowl. Sift together the flour, the baking powder, salt, cinnamon, and cloves and add to the batter. Stir in the apples and raisins and spoon into well-greased muffin tins. Bake 25 minutes or until done. Serve hot
Makes 20 2-inch muffins.
