Introduction

A great summer salsa or salad. A great summer salsa or salad.

Ingredients

    2 cups of colored peppers, finely chopped
    .5 cup red onion/scallion finely minced
    1-2 tomatos, seeded for salad or not for salsa, chopped
    1 cup canned sweet corn nibblets
    1.5 cups black beans, rinsed
    .5 jalpeno pepper, seeded and minced
    1-2 tbsp. minced fresh cilantro
    .25 cup lime juice, fresh (about 2 limes)
    1 tbsp olive oil
    1 tsp. cumin
    1 tsp. chile powder
    dash salt and black pepper

Directions

Chopped peppers. For juicer salsa, don't seed tomatos or do so if you prefer a less juicy salsa/salad. Add minced onion and jalapeno. Add in corn, black beans, cilantro. Mix lime juice, olive oil, and herbs/spice in a seperate dish and then pour over the mixture, stir. Chill until ready to use. Use as a salsa with corn chips, as a salad, or use to top grilled chicken or add grilled shimp.
