Introduction

Tomato, spinach and lentil soup Tomato, spinach and lentil soup
Number of Servings: 6

Ingredients

    1 C lentils
    4 C water
    1 chopped onion
    2 potatoes, cubed
    2-3 carrots
    1 bay leaf
    1-2 tsp dried basil
    1 tsp oregano
    2 garlic cloves
    1.5 C canned diced tomatoes
    salt to taste

    Rinse lentils and place in 5 qt pot with water, onions, potatoes, carrots and seasonings
    Bring to boil than lower heat and simmer covered for about 45 min to an hour till potatoes/carrots and lentils are soft.
    Add tomatoes and spinach (if desired) then simmer 10-15 minutes. Add salt or celery flakes to taste.
    Add more water or tomatoes if a thinner consistency is desired!
