    2 cups flour
    1 1/2 tsp. baking powder
    1/2 tsp. baking soda
    8 tbs. butter, softened
    1 cup brown sugar
    3 large or 4 medium bananas
    2 eggs
    1 1/2 tbs. yogurt (non-fat, plain)
    1 tsp. OJ
    1/4 tsp. salt
    1 cup pecans (optional)


PREHEAT oven to 350 degrees F. Grease and flour a 9 x 5-inch loaf pan. In a large mixing bowl, sift together flour, baking powder, and baking soda. Set aside. In a large nonreactive mixing bowl, cream butter, sugar, and bananas. Add eggs and mix until combined. Add yogurt or milk, orange juice, salt and pecans. Mix thoroughly. Add dry ingredients to wet and mix until just combined. Pour into prepared pan. Bake for 1 hour 25 minutes, or until a toothpick inserted in center comes out clean. Start testing for doneness after 50 minutes.

    sounds yummy, but not particularly "thin" at 336 calories a serving. i make mine with white wheat flour, oatmeal, flax seed, and i replace all the butter with applesauce. it ends up being around 170 calories a serving with like 3 grams of fat. - 3/6/10

    Yea, I know! That's the name of the cookbook I got it from. I was a little surprised myself at the high calorie count.
