Introduction

Ingredients

    3 large yellow peppers
    1 large onion
    10 medium mushrooms
    2 chicken breasts, bone and skin removed
    1 tbsp olive oil
    1 tbsp honey
    Juice of 1/2 a lemon

Tips

You will need 10 wooden skewers for this recipe. Soak them in water for 30 minutes to avoid burning them.


Directions

Mix olive oil, honey, and lemon juice well.
Cut up the chicken breasts into 3 inch slices and mix with the olive oil mixture. Let set for 3-4 hours.
Cut up the red onions into strips.
Place two pieces of bell pepper and two mushrooms with two pieces of the chicken in any order on the shish kabobs. Place onion strips throughout on the skewers.
Place on grill until cooked thoroughly (around 15 minutes) or you can broil them in your oven for around the same time.
Make sure that you rotate them as they are cooking.

    Rather than add extra calories by adding more honey. Use a darker honey. The darker the honey, the bolder the taste.

    Love love LOVED! This certainly will be made again. I decided on Pineapple before reading comments and added extra lemon juice. I also seasoned the marinade with rosemary, salt and pepper and it turned out fantastic! - 8/1/12

    If you want more flavor, add spices / herbs of choice to marinade. Did on G F grill, worked just fine. very nice summer recipe, but with an indoor grill, great any time. To one meal we added Chinese 5 Spice, to another meal we added Chili powder and Cumin, to another we added Turmeric and Curry. - 7/5/13
