    1 avocado, chopped
    1 tomato, chopped
    1 can (14.5 oz) cannellini or great northern beans, rinsed and drained
    1/4 cup sliced or chopped red onions
    4-8 large leaves green or red-leaf lettuce
    8 medium tortillas

    1.5 tbsp ground flaxseed
    1/4 cup water
    1 tbsp white wine vinegar
    1 tbsp herb vinegar (such as tarragon vinegar)
    2 tbsp olive oil
    1 tsp Worcestershire sauce
    1/2 tsp Dijon mustard
    1/4 tsp salt
    1/4 tsp black pepper
    1 clove garlic, pressed


Begin mixing dressing:
Mix flaxseed and water in medium bowl, and stir with a whisk. Let stand 5 minutes (start chopping veggies during this time). Add remaining ingredients and stir with a whisk until well blended.

In another medium bowl, combine avocado, tomato, onions and beans. Add dressing and mix gently to coat. Place a lettuce leaf (or leaves) on tortilla. Spoon bean mixture down center of tortilla, fold in sides and roll to enclose filling.
