    3 Tbsp flour
    1 lb turkey
    salt & pepper to taste
    3 tsp olive oil
    2 cloves garlic, minced
    3/4 tsp ground sage
    1/4 cup dry white wine
    3/4 cup chicken broth
    1 tsp lemon juice
    1 tsp butter


spread flour on plate
pat turkey dry w/ paper towels and season w/ salt & pepper
dredge lightly in flour
in large nonstick skillet, heat 1 tsp oil over med-high heat
add half the turkey and cook 1-2 min. per side (cooked through)
transfer to platter
repeat w/ remaining turkey
add remaining tsp oil, garlic & sage and cook for aprox. 1 min.
add wine, cook scraping up any bits of turkey, until reduce by 1/2 (aprox. 1 min)
add broth, cook until reduce by 1/2 (aprox 5 min.)
stir in lemon juice & any juice on platter from turkey & simmer 1 min.
remove from heat and swirl in butter.
serve turkey w/ sauce.

  • Tasted like it was made in a fancy restaurant! The only modifications I made were I used italian seasoning instead of just sage, and had to add ~1TBSP flour to the sauce to get it to thicken. I'll be making this again! - 6/29/09
