    3 large sweet onions, sliced (about 8 cups)
    2 Tbsp butter
    1 Tbsp olive oil
    1 tsp salt
    3 Tbsp sugar
    3 Tbsp flour
    8 cups boiling water
    8 boullion cubes
    1 cup white wine
    1 baguette sliced
    1/2 lb. gruyere cheese (or swiss) shredded


place onions, butter and olive oil in a 4 qt sauce pan and simmer, covered for 15 minutes.
remove cover, add salt and sugar stirring frequently for 30-40 minutes. The sugar will turn the onions a nice golden brown, add a little more if necessary.
while onions are cooking....
mix boiling water with boullion cubes and set aside
bake baguette slices at 350 degrees for about 20 min. or until they are toasted all the way through. brush each toasted slice with a small amount of olive oil and rub with some fresh garlic if desired. set baguette slices aside.
after the onions are an even golden brown and the flour and stir for about 3 minutes. slowly add water and boullion mixture while you stir. Add wine and simmer. Add salt and pepper to taste.
in an individual soup crock....fill with soup, place 1 or 2 baguette slices on top and top with 1/4 cup cheese. broil until cheese is melted and bubbly.
