    1/4 cup frozen apple juice concentrate, thawed
    1 tsp ginger,grated
    1 tsp garlic, minced
    1 lb pork shoulder, cut into cubes
    1 red pepper
    1 cup onion, chopped
    1 TBsp cornstarch
    2 TBsp reduce-sodium soy sauce
    1 TBsp cider vinegar
    1 can pineapple, chunks
    1 TBsp brown sugar


In a shallow non-metal dish, combine the apple juice concentrate, ginger, and garlic. Mix well. Add the pork and stir to coat. Set aside 30 minutes in marinade.

Coat a non-stick skillet wit6h spray and place over medium-high heat. Add the Pork and marinade, Cooking, stirring, for 5 minutes or until pork is no longer pink in center. Add onions, red peppers, and green peppers. Cook, stirring for 3 min or until crisp tender.

Place the cornstarch in a medium bowl. Add the soy sauce and vinegar. Stir until smooth. Stir in the pineapple (with Juice) and brown sugar. Add to the skillet. Bring to a boil. Cook, stirring frequently, for 3 minutes, or until sauce thickens.

Freeze: Pack the cooled cooked poor freezer quqlity plastic bag. To use, thaw overnight in the refrigerator. Place in a Covered microwave safe dish and microwave on high for 5 minutes until hot.
