Introduction

Number of Servings: 4

Ingredients

    2 cups water
    1 cup dried lentils
    1 small onion, diced
    1 cup quick cook oats
    3/4 cup low fat shredded cheddar cheese
    1 egg, beaten
    1/2 cup ketchup (can sub tomato sauce)
    1 tsp garlic powder
    1 tsp dried basil
    1 tblsp dried parsely
    1/4 tsp black pepper

    Pam or other non-stick cooking spray


Directions

Serves approximately 4 people.

Boil water. Add lentils & simmer covered for 25-30 minutes or until lentils are soft & water evaporates.
Preheat oven to 350 degrees.
Drain & partially mash lentils.
In a bowl, mix together the lentils, oats, onion & cheese.
Add egg, ketchup, herbs & seasonings.
Mix well.
Thoroughly spray loaf pan with cooking spray and spoon loaf mixture into pan. Spread & smooth.
Bake covered for 30 minutes and uncovered for 10 to 15 more minutes.
Let cool on rack for 10 minutes before serving.

    This is amazing! I rarely change or add anything to the base recipe, and we have it regularly in place of meatloaf, because this is BETTER than any meatloaf recipe we've ever tried! Thanku so much for this recipe! - 10/14/10

    Awesome recipe! I used suggestions form
    The comments here (fresh garlic, canned lentils, and balsamic vinegar) and made an addition. I mixed 1/3 cup of tomato paste, 2 tbls katchup, 1 table spoon Worcestershire sauce and a little garlic powder. Spread that over the top for last 5 mins of cooking.

    Delicious! I made this for dinner last night and woke up this morning thinking about it!!! The only changes I made was to add a cup of sliced mushrooms and a tablespoon of cumin. I LOVE this recipe and will make this frequently! Thanks!!! - 4/20/11

    I love this recipe, but instead of making a loaf, I make lentil patties. I get 11 burgers out of the recipe, then cook and freeze them. Pop into microwave for 1 min to heat for a low calorie burger on a thin bun. Even my boys love them. - 4/30/12
