    3 large eggs
    9 egg whites
    12 Tbsp Weight Watchers Mexican Shredded Cheese
    1 small onion, diced
    2 cups sliced mushrooms
    4 cloves garlic-minced


cook onions, garlic and mushrooms until soft
evenly portion them into muffin tin
add 1 tablespoon to each
pour beaten eggs on top, almost full

Bake at 350 for 20-25 minutes

Makes 12 egg muffins
