THIS IS A DISH MY DAUGHTER LOVES AND ASK FOR ALL THT TIME! FOR HER AND THE REST OF THE FAMILY THEY EAT IT ON TORTILLA BREAD I LIKE TO EAT IT IN PITA POCKETS. ALSO WHAT WORKS GREAT IS TO ADD REFRIED BEANS SOUR CREAM AND ALL THE OTHER TACO FIXINGS, BUT TO KEEP THE CALORIES LOW I STAY WITH THE BASICS!     16 OZ (1LB) BONELESS SKINLESS CHICKEN BREAST
    2 CUPS SALSA OF YOUR CHOICE
    1/2 CUP NO SALT BLACK BEANS
    1/2 CUP YELLOW SWEET CORN CAN OR FRESH
    2-3 TSP TACO SEASON, I LIKE ALOT
    1/2 CUP WATER
    CROCKPOT

Directions

IN CROCKPOT ADD ALL INGREDIENTS COOK ON LOW, WHEN CHICKEN IS COOKED SHRED WITH FORK...SERVE ....ALSO GREAT WITH BROWN RICE....THERE ARE JUST SO MANY OPTIONS WITH THIS!!

    I made this last night, but it wasn't yours. My recipe did not have as much taco seasoning and I wish I would have seen yours because mine needed more flavor. I added more seasoning to the leftovers and even a bit of cumin, but it is a really easy meal to make and so good over rice. Thanks!! - 8/23/10

    This idea was so great for me. I "cheated" and found a healthy black bean and corn salsa so when I got off work in the morning, mixed the frozen chicken breasts with jar of salsa and water and when I woke up up in the afternoon I had a great crockpot meal for the family! Thank you for the idea! - 3/30/10
