    1 large poblano, roasted, peeled and seeded, then roughly chopped
    1 C milk
    1.5 T butter
    1 T flour
    1.5 C sour cream
    1/4 C heavy cream
    salt and pepper to taste


Puree the milk and pepper in a blender.

Make a blonde roux with the flour and butter; let it take just a bit of color, around 5 minutes on medium-low heat, stirring. Slowly whisk the milk/poblano puree into the roux and bring just to a simmer. Add the cream and sour cream, season with salt and pepper, and bring back to a simmer. Serve.
