Ingredients

    2 slices glue free bread
    135 g Pink Salmon, poached
    Few slices of Cucumber
    Olive oil spread
    1 slice dill gherkin
    lettuce

Directions

Poach salmon by covering with water or stock, adding a bay leaf and peppercorns. Heat for 20 mins on a low heat.

Assemble sandwich using cooled poached salmon.
