Ingredients

    1 large eggplant
    .25 cup extra virgin olve oil
    1 TBSP onion, finely chopped
    1TBSP lemon juice

Directions

1. Preheat oven to180
2. Pierce eggplant several times with a fork.
3. Place in oven on a baking sheet for about 45 minutes or until soft.
4. Set aside and cool for 15 minutes.
5. Peel the cooled eggplant and discard skin and put in food processor.
6. Add olive oil, garlic, onion, and lemon juice.
7. Puree mixture until desired consistency.
Seanson with salt & pepper if desired.
Serve warm or cold.
