    2 C raw shredded coconut
    3.5 Tblsp sweetener, such as agave nectar, maple syrup or honey (but note that honey is not vegan)
    1/6 tsp peppermint extract
    1/6 tsp vanilla
    2 tsp raw cacao or carob powder
    smidge of cayenne pepper
    small pinch of sea salt


Blend coconut in a dry blender like Vitamix until the consistency of butter and add honey. Divide in half. Into the first half mix the peppermint extract. Into the second half mix the cacao, vanilla, cayenne, and salt. Spread half the cacao portion into a 4x4 pan or plastic tub and set in freezer for 5 minutes to harden. Spread the mint mixture over the hardened layer and return to freezer for 5 minutes. Spread the rest of the cacao mixture on top and place in freezer or refrigerator until firm. Slice into 16 pieces and store in refrigerator. Delicious fudgy raw treat! Makes 16 pieces.
