A nice hot curry/soup that is delicious on a cold night! A nice hot curry/soup that is delicious on a cold night!
Number of Servings: 4


    2 chicken breasts, cut into cubes
    2 sweet potatoes, cut into cubes
    1 small zucchini, sliced
    1 small bunch of broccoli, cut into bite sized pieces
    1 chicken bouillon, dissolved in 2 cups of water
    1.5 tbsp of green curry paste (this will be hot - use less if desired)
    1 can of lite coconut milk
    0.5 tbsp of fish sauce


Place curry in a pot and heat until fragrant.
Add sweet potato, chicken and chicken stock, cover, and cook for 15 minutes (until potato almost done).
Add broccoli and zucchini, cook for 5 minutes (until soft).
Remove lid, turn heat down low. Add coconut milk and fish sauce to taste (or use salt if fish sauce is not available).
Serve with rice, noodles or alone.
