Ingredients

1 cup Whole Wheat Couscous (I chose Shiloh Farms brand for nutrition tracker)
3 cups low sodium chicken broth (Pacific Natural Foods brand is a staple in my house)
4 oz reduced fat feta cheese crumbles
3 cups spinach
1 t olive oil
Tips
You may want to add in a pinch of salt or garlic powder to taste (not included in nutrition info).
Directions
Add olive oil to a medium size sauce pot. Cook spinach in the olive oil over medium heat, just until it is wilted. Set spinach aside for later.
Cook couscous in that same pan according to directions substituting the broth for water.
Once the couscous is fully cooked add in the feta cheese. Stir well until cheese is melted.
Add spinach to the pot and stir well until all ingredients are fully mixed together.
