    3 cans of red kidney beans
    1 lb of smoked turkey sausage (eckridge or hillshire)
    1 c chopped onions
    1 c chopped celery
    1/2 c chopped bell pepper
    1/2 c water
    4 tbl olive oil


Sautee onions, bell pepper, and celery in olive oil until soft. add smoked turkey that has been cut into 1" pieces. sautee for another 5 minutes
Add 3 cans of kidney beans including liquid. Add another 1 cup of water. Salt & pepper to taste, 1/2 teaspoon of cumin powder. simmer and stir occasionally for 40 minutes.

serve with steamed white rice
