Introduction

We got a lot of produce with my first produce Co-op and I wanted to make good use of them. I used 1/2 the bag of fresh spinach, the whole container of shrooms, onions and fresh garlic in this tastey recipe! Ingredients

    -1 lb extra lean groud beef
    -2 cloves fresh garlic, minced
    -1 C finely chopped onion
    -1 package, 8 oz, fresh mushrooms, chopped

    -5 oz or 1/2 a 10 oz bag of fresh spinach, chopped
    -1 T (3 t) Worchestershire sauce
    -1 1/4 C Rumbamel's Delicious Brown Rice (Success Boil in the bag brown rice cooked in the microwave with 1 1/4 c ff chicken broth)
    -1 can cream of mushroom soup ( I use the one from Aldi)
    -salt and pepper to taste

Directions

--Brown your meat in a large nonstick skillet and cook your rice at the same time you are chopping your shrooms, onions, garlic and spinach.

Drain the meat well before you add your garlic, onions and mushrooms. Cook on med/low heat until the shrooms and onions are tender. Add the spinach and stir. Cook, stirring occasionally until spinach is somewhat wilted, about 2-3 minutes, maybe. Add the worchestershire sauce, cream of mushroom soup and stir well. Heat until warmed and then season with your salt and pepper as needed.

--Makes 5 servings of 1 C each.
