    2 tsp Olive Oil
    2 med. Onions, chopped
    1 med. Bell Pepper, Chopped
    1 med. stalk Celery, chopped
    1 med. Carrot, Chopped
    1 14 oz. can Tomatoes
    1/2 c. canned Low-Fat, Low-Sodium Chicken Broth
    2 T chopped Parsley
    1 tsp. ground Thyme
    1/4 tsp. Salt
    1/8 tsp. Cayenne Pepper
    4 4oz. boneless skinless Chicken Breasts


Heat olive oil. Saute onions, belle pepper, celery & carrot until tender, 4-5 minutes. Add tomatoes, broth, herbs, salt & cayenne. Stir, then add chicken and bring to a boil. Reduce heat and poach, partially covered, until chicken is cooked through, 8-10 minutes. Transfer chicken to another dish, simmer sauce & reduce by half. Spoon sauce over the chicken.
