    Chicken thighs, bone in, skin removed, 7 large
    Carrots, 2 large
    Celery, 4 large
    Onion, 1 large
    Fennel, 1 med
    Sweet Bell Peppers, 2 large
    Mushrooms, 8 med
    Kalamata Olives, aprx 30
    Fresh Thyme, 2 sprigs
    Whole Tomatoes, 28oz can
    Cannelini Beans, 14oz can
    Chicken stock, 1 cup
    Red Wine, 1 cup


Dredge chicken in flour and brown in olive oil in heavy pan. Meanwhile, cut up all the veggies into large chunks. Place the onions and carrots in the bottom of the crock pot and then the chicken place two sprigs of fresh thyme on top of the chicken then pile the rest of the veggies on top of the chicken. Drain and rinse the beans and put them in, add the olives, crush the tomatoes with your hand as you add them on top. Pour the broth & wine over everything and put in on low for 7-8 hours. I like to cook this overnite and then chill during the day so I can skim the fat off the top and reheat for dinner. Obviously the veggies could be varied depending on your tastes and what looks good at the market. Makes abgout 10 1-cup servings.
