Number of Servings: 8


    Cabbage, fresh, .25 head, large (about 7" dia)
    Canned Tomatoes, 1 large
    Mushrooms, fresh, 1 cup, pieces or slices
    Onions, raw, 1 cup, chopped
    Garlic, 3 clove
    Spinach, fresh, 2 cup
    Carrots, raw, 2 large (7-1/4" to 8-1/2" long)
    Better Than Bouillon - Chicken base, 3 tsp
    Oregano, ground, 1 tbsp
    Pepper, black, 1 tbsp
    Parmesan Cheese, hard, 1 oz
    Beans, white, 1.5 cup (1 can cannellini beans)
    Pepper, red chili flakes or cayenne, 1 tsp
    V8 - 2 cups
    Water - 10 cups


Add all ingredients to a large stock pot except the spinach and beans. Bring mixture to a boil and then reduce to medium heat to simmer for 15 minutes. Add drained and rinsed beans and spinach, cook for a few more minutes to warm the beans and wilt the spinach.

Makes approximately 8 - 2 cup servings
