Number of Servings: 5

Ingredients

    2 Cups of Pinto Beans (raw);
    6 Cups of water, or enough to cover the beans plus 2-3 inches in the crock pot;
    2 Cloves of Garlic, whole or minced;
    2 slices of bacon, chopped up. You can aslo just throw a ham hock in there;
    2 tsp of salt or to taste;
    1 Jalepeno seeded and chopped up (remove the stem);
    1/2 cup of onion chopped up (more if you like)



Directions

Clean beans (take out any rocks, or raggedy looking beans). Rinse them until the water runs clear. Add them to the crock pot, add the water, enough to cover the beans plus 2-3 inches. Add all of the ingredients except for the tomato. Cook for 3 1/2 hours on high then add the tomatoes. Cook on high for another 30 minutes. You can mash them if you like, but I always serve them whole, With some warm corn tortillas.

should make about 5 - 1 1/2 cup servings (I usually dish out 1 cup of the solid stuff and then 1/2 cup of the liquid on top.
