Number of Servings: 6

Ingredients

    1 pound whole wheat penne
    2 Tbsp Extra Virgin Olive Oil
    3 garlic cloves, minced
    1/2 cup white onion diced
    1/2 bunch fresh basil
    Salt and pepper (pinches to taste)
    1 pound Calamari, cut into 1/4 inch rings
    (Leave any tenticles whole)
    40 oz Jar of Marinara Sauce ( Victoria's All natural)
    Parmasean cheese

Directions

First boil water and begin to cook Penne.

In a large cold skillet add olive oil and garlic and cook on a medium low heat until golden, add onion and salt and pepper. Cook onion for 3 minutes then add calamari cook for 3 minutes. Pour entire jar of sauce and add basil. Bring up to a simmer for another 3 minutes. Pour over Penne and top with Parmasean cheese.

    Incredible!
    This dish was amazing! I added a little red wine vinegar while sauteing the calamari and crushed red pepper at the end for an added kick. Mushrooms might be a nice touch as well. - 8/22/10

    I do not like calamari. Do you have any substitue suggestions?

    You could easily use shrimp or cut chicken into bite size chunks :)
