Introduction

A cleaner approach using fresh, local and homemade products. While listing is for single serving. I used a 12 oz box of lasagna and made 6 servings in a 13x9 glass dish. Ingredients

    2 oz. whole wheat lasagna (mine calculated to 3 sheets)
    1 oz skim ricotta cheese, I mixed this with italian herbs
    1 mozzarella cheese stick or maybe try 1 oz.
    1/2 c. fresh spinach
    1/2 c. homemade pasta sauce

Directions

Coat bottom of dish/pan with some of sauce.

Cook and drain lasagna. Lay out on board. Paint the ricotta on the pasta. Add other cheeses. Top with spinach leaves. Roll and place in dish.
